This concern has prompted the adoption of The Hazard Analysis Critical Control Point system (HACCP) which has become the universally recognised and accepted method for food safety assurance.

From 1st January 2006, new EU food hygiene legislation has applied throughout the UK.

All food business operators must follow the rules of hygiene outlined in regulation (EC) No. 852/2004.
